Apple Coleslaw

Serves 2-4

¼ red cabbage,

1 carrot

½ small onion

4 spring onions

2 firm apples (like Braeburn)

1 tbsp cider vinegar

50g Just Mayonnaise

2 tsp nigella seeds

1 tbsp maple syrup

¼ ground black pepper

Pinch of sea salt

  1. Finely slice and shred all of your fruit and vegetables and place in a large bowl.
  2. Whisk together the vinegar, Just Mayonnaise, nigella seeds, maple syrup, black pepper and salt, then pour this over the shredded fruit and vegetables making sure everything is evenly coated.
  3. We recommend you leave the coleslaw for 30 minutes before serving.
